Breakfast Polenta

I had a chance recently to taste Packit Gourmet’s Creamy Italian Polenta.  Now my friend was not willing to share all of his, but I will say that it made a tasty little meal.  This got my head to spinning and I soon realized that I would not be able to perfectly replicate this meal, but I could probably give it a whirl.

After a few miscues and other issues, I finally settled on what I consider to be a poor man’s version of their food. Now it is not completely the same. If you want true tasty delight, then I suggest you visit the website and buy theirs. It is far superior to what I have whipped, but  if you are on a budget and tired of oatmeal for breakfast, then mine will work just fine till you try the real thing.

Breakfast Polenta ala Anderson

Bob’s Red Mill Corn Grits Polenta
Garlic Powder
Black Pepper
Bacon bits or Textured Vegetable Protien

Bring 1 cup water, 1/8 teaspoon garlic powder and 1/8 teaspoon black pepper, to a boil, then add 1/3 cup of  Corn Grits Polenta to the boiling water. Stir and cook for about two minutes, then remove from heat and add 2 table spoons of bacon bits to the polenta and stir them in very well.

If using flavored or unflavored textured vegetable protein I add a bit more than a cup of water to the pot and add the the tvp as well as the spices.

The Polenta tends to firm up rather quickly after the heat is removed so be careful, but eat as quickly as is possible. I am sure that adding shredded cheese or other spices after cooking would only make this even tastier.

This makes one nice human sized serving that can be adjusted to taste. This is not the most exciting dish, but it is a great break from oatmeal every morning on the trail.
